I have not seen much bing traffic as yet.
For one site I develop and SEO is called
National Stockyard Systems I have the following search engine generated traffic split so far this month as follows. Obviously search rankings play a part, but for this site we are ranked roughly equally well in all search engines, give or take.
Google: 80.6%
Google Images: 5.6%
Yahoo: 5%
Bing: 4.1%
Ask: 2.2%
Other Minor Search Engines: 2.5%
I also find sometimes the right link on the right directory or similar will actually generate as much traffic as bing or yahoo, but obviously nowhere near Google! Also if you include Google Images, that over 85% traffic in this case.

Another site I do seo for is
Two in Harmony Christian Dating.
For this site, figures are as follows:
Google - 84.7%
Bing - 10.5%
Yahoo - 3.8%
Ask - 0.7%
Other Minor Search Engines: 0.3%

Comparing the two above examples, in the second example Bing is a much higher percentage than the first, but traffic isn't taken away from Google - it's just a different split between Bing, Yahoo and Ask. Again around 85% of search engine generated traffic comes from Google.
Discrepancies between case 1 and case 2 results are probably due to variations in search rankings, and a much bigger sample would be required for it to be scientific, however I think it shows which engine is worth ranking for. Generally I think you would have to have a VERY popular niche ranking number 1 in Bing to generate any significant level of traffic, and generally if you where doing enough things right to be number 1 in Bing you would usually at least be page 1-2 in Google for the same keywords.
